Program description
The Culinary Management diploma program at Humber imparts the knowledge and abilities required to succeed as a chef in the culinary field. Work at the best restaurants and food service facilities in the world and take advantage of opportunities for foreign studies abroad. Participate in skill competitions on school, in your province, at the national level, and internationally to advance your profession.
In the Chef's Table course, this program will also equip you with the skills necessary to plan, coordinate, carry out, serve, and oversee a dining event. Students will demonstrate their mastery of both traditional and modern cooking methods through à la carte cooking, mise en place, and a dinner with a market theme.
Students enrolled in the Advanced Garde Manger and Charcuterie classes will learn modern food presentation and styling methods as well as become skilled in a variety of butchery procedures for a broad variety of proteins. Among colleges in Ontario, the Emerging Trends course is special because it gives students the chance to collaborate with visiting local chefs.
We guarantee that you acquire all the necessary technical and employability skills for your future career by having half of your curriculum be completed as hands-on training in one of our nine baking and pastry or culinary labs.

Requirements for applicants
International Academic Equivalencies:
- Ontario Secondary School Diploma (OSSD) or equivalent including these required courses:
- Grade 12 English (ENG4C or ENG4U or equivalent)
- Three Grade 11 or Grade 12 C, M or U courses in addition to those listed above
or
- Mature student status
or
- College or university transfer status
For Indian applicants one of the following:
- All India Senior School Certificate/Higher Secondary School Certificate
- Year 12 State Board Exams with a minimum grade of 70 or above in required program subjects.
- Applicants who previously completed post-secondary education require to provide backlog summary. Maximum backlog attempts accepted:
- Bachelor’s degree 3 year: 2 backlog attempts
- Bachelor’s degree 4 year: 4 backlog attempts
- Master’s degree: no restriction
- 10 + 3 Curriculum: 4 backlog attempts
To be eligible you must possess the equivalent of an Ontario Secondary School Diploma (OSSD) and required courses as noted in the course list.
English Proficiency requirements are:
- A minimum TOEFL Academic Level score of 550 (paper based) or 80 (internet based) or
- an IELTS with an overall minimum score of 6.0 (with no single band score below 5.5) or
- CAEL with an overall band score of 60 or
- Cambridge English Test with B2 First / C1 Advanced / C2 Proficiency 169 (with no single subscore below 162) or
- Duolingo Language Test with score 105 and above+
- International applicants may be asked to submit an ICAS or WES evaluation.
